CACCIUCCO ALLA VIAREGGINA

Ingredients for 4 people

350 g. of ripe tomatoes 4 cicale (similar to crayish) 1 glass of red wine chopped parsley 2 cloves of garlic 4 slices of toasted bread 1 chili pepper 100 g. of extra virgin olive oil salt and pepper to taste.

Preparazione

Colour the spring onions in the oil then add the beef and the pancetta, cook on a low heat and progressively add the vegetables. Continue cooking for another 15 minutes then add the broth. Adjust the seasoning and continue boiling. Serve hot with croutons of bread and extra virgin olive oil.

Olio consigliato

Extra virgin olive oil from the hills of Lucca, with a not too intense lavour.

Vino suggerito

Red wine with a low alcohol count, good softness, aromatic and persistent.
